MY ROASTED PEPPERS

Several folks have asked me to post my Roasted Peppers Recipe.

The only thing I would like to mention is different brands of Sun Dried Tomatos can taste entirely different. Buy a brand that you would eat out of the jar, plain. That way, you know you are going to love the results in the peppers.

So here we go:

ROASTED PEPPERS

INGREDIENTS:

4 RED BELL PEPPERS
SOME SKIN FROM ROASTED PEPPERS
(ADDS A NUTTY FLAVOR)
3 CLOVES GARLIC
EXTRA VIRGIN OLIVE OIL
OIL FROM SUN DRIED TOMATOS
BALSAMIC VINEGAR
TOASTED PINE NUTS
(TOAST IN A FRYING PAN WITH OLIVE OIL)
SUN DRIED TOMATOS
(“FRIEDA” BRAND, PURCHASED AT GELSONS)
FRESH BASIL
ONION OR SHALLOTS
SALT
PEPPER

ROAST PEPPERS OVER OPEN FLAME UNTIL BLACK ALL OVER AND TENDER. PUT IN PAPER BAG FOR APPROX. 5 MINUTES. (THIS ALLOWS STEAM TO RELEASE SKIN AND THEY PEEL MUCH EASIER) PEEL PEPPERS AND REMOVE CORE AND SEEDS. ALSO REMOVE BITTER MEMBRANES INSIDE PEPPERS. SLICE PEPPERS INTO STRIPS.

COMBINE ALL OTHER INGREDIENTS WITH PEPPERS AND MARINATE OVER NIGHT, STIRRING OCCASIONALLY. THEY WILL LAST APPROX. 2 WEEKS IN REFRIGERATOR. (WE HAVE NEVER HAD THEM LAST THAT LONG....HEE HEE)

FATHERS DAY

Some years, like today, when I was little, my Birthday would fall on Fathers Day. I felt so special to be sharing my day with the most perfect person in the world. To say that I was a "Daddys' Girl" was putting it mildly.

It has only been in the last few years, looking back, that I realized he was just like the rest of us. He was still Daddy, but human...flawed and complicated...loving and sincere. It's a paradox that we humans live with every day.

For those of you that still have your Fathers...love them, cherish them and forgive them. For those of us that don't...well, remember them fondly, with love in your heart.

SUZIS' BREW

Living on the 9th floor of an apartment building presents its problems...whenever someone on a floor below me cooks, we smell it. Sometimes that's great...sometimes I think they are making hoghead cheese...(for those of you who know that smell, you will know what I mean) Anyway, I came up with, what I call, "Suzis' Brew". I use it whenever I can't stand the smells coming in, or when the house just gets "stuffy". It's easy, cheap and I don't have to run around looking for candles.

So here is how I make it.

I use the smallest saucepan I have...I use an old one, because I have burned it a few times and man oh man, is it a pain to clean!!!!!

The basic recipe is:

Cranberry Juice
Cinnamon Sticks..(2)
Cloves (5 NO MORE OR THAT WILL BE ALL YOU SMELL)
Vanilla Extract
Almond Extract

At this point, you could actually drink it. It is like a Christmas Hot Toddy...Yummmmmy!!

Then, I add any juices left in our glasses. (DON'T DRINK IT ANYMORE UNLESS YOU ALREADY EXCHANGE BODILY FLUIDS...hee hee)

Grape Juice
Pinapple Juice
Apple Juice

These can all be added fresh or whatever is leftover in a glass.

Sometimes, if I have oranges or lemons, I will add slices or just the rinds.

I keep this on the back of my stove and turn it on several times a day...
Be sure to start fresh every week..
